Hah! You remember getting the blue ring in the game and Link changed colors from green to blue? Yep, those.
They can change Links palette colors by holding the item.
The other part to items that change graphics are LTM, or Link Tile Modifiers. When you have the Big Shield for example, it adds an offset to the sprites. (See tile page 0 for the gfx)

Ok, so in the Select Item window (which appears when clicking the top left icon in the Screen Panel) there is:
* Ring 1 (017)
* Ring 2 (018)
* Ring 3 (061)
which when placed on the screen and collected by Link change his palette colors according to the Game Icons window, but only if the ring collected is an upgrade over any rings he already has. Ring 0 doesn't exist, and only the most powerful ring collected actually appears in the subscreen.

I forget some minor details for item overrides, but the red potion for example becomes the blue after use, then the letter or empty slot.
